In American English, Monday through Sunday means every day of that week.
In British English, I believe it is written Monday to Sunday (inclusive).
What is the purpose of the word inclusive?

Sunday leaves the possibility that it might not be written on Sunday. I'm guessing.
The purpose of 'inclusive' in British usage is to make sure the reader understands that the first and last items of a range (e.g. one to ten) are included. It is not necessary in the example given.
