The Lotus Sutra is a teaching that encourages an active engagement with mundane life and all its challenges.
Is 'teaching' correctly used? Shouldn't it be "teachings" instead, as "teaching" refers to the teaching profession?

Teaching (singular) means, apart from the profession, ideas or truths, or personal ethics which are imparted or taught by an authority--
either a person or a written source. In this case, sutra is singular, so calling it a teaching is perfectly acceptable. This is not a definition which would vary from American to British usage.
