Phoenix, I have got to see the size of a rabbit where you're from, in yorkshire we put in one rabbit per person.

just came back from an outin' with littlek. she really did capture a rabbit! her sister has it in a box. formerly domestic, then probably nudged out into wilderness. what shall we do with it? anybody wants a real rabbit? say so before we eat it!

I mean, I know some recipes for the "common roof rabbit" aka cat as well ... :wink:

But this will serve better:
Falscher Hase (False Hare/False Rabbit [German Meatloaf])
Ingredients:

1/2 lb Ground Beef; Lean
1/2 lb Ground Pork; Lean
1 Onion; Medium, Chopped
3 T Bread Crumbs
3 T Water; Cold
2 Eggs; Large
1/2 t Salt
1 t Paprika
1 t Mustard; Prepared
2 T Parsley; Chopped
3 Hard Cooked Eggs; Peeled
4 Bacon; Strips
4 T Vegetable Oil
1 c Beef Broth

Sauce:

1/4 c Water; Hot
1 t Cornstarch
1/4 c Water
1/2 c Sour Cream

Instructions:
Thoroughly mix ground meats, onion, bread crumbs, 3 T cold water, and eggs. Flavor with salt, praprika, mustard, and parsley. Blend ingredients thoroughly. Flatten out meat mixture in the shape of a square, (8 X 8-inches). Arrange whole hard-boiled eggs in a row along the middle of the meat. Fold sides of meat pattie over the eggs. Shape meat carefully into a loaf resembling a flat bread loaf. Occasionally rinse hands in cold water to prevent sticking. Cube 2 strips bacon; cook in a Dutch oven about 2 minutes. Carefully add the vegetable oil; heat. Place meatloaf in the Dutch oven and cook until browned on all sides. Cut remaining bacon strips in half and arrange over the top of the meatloaf. Place uncovered Dutch oven in a preheated oven for about 45 minutes. While meat is baking, gradually pour hot beef broth over the top of the meatloaf; brush occasionally with pan drippings. When done remove meat to a preheated platter and keep it warm. Add 1/4 cup of hot water to pan and scrape all particles from the bottom. Bring to a gentle boil and add cornstarch that has been mixed with 1/4 cup water. Cook until bubbly and thick. Remove from heat and stir in sour cream. Reheat to warm. Season with salt and pepper if desired. Serve the sauce separately.

i think it should first be established if a HARE or a RABBIT is to be sacrificed. dagmarka : my grandfather would tell us kids that to catch a hare , one had to sprinkle some salt on the hare's tail ! so we'd walk around with a handfull of salt in our shorts trying to outsmart a hare .my mother couldn't figure out how the salt got into my pant-pockets since we'd be sworn to secrecy by grand-dad. he told us, the trick wouldn't work, if we told anyone . we can buy farm-raised rabbit meat at the local supermarket (loblaw's), and we do like to eat it sometimes. very lean and mild-tasting. mrs. h usually makes a gravy with plenty of sourcream for braising the rabbit. we do have some rabbits in the garden, but we wouldn't know what to do with it , if we caught one (i certainly couldn't butcher it - so we let them get into our carrots and lettuce , and hope they'll leave some for us). hbg

Lil K - How's the bunny fairing? Do you still have him?

We found a baby groundhog the other day. He was cornered by a neighbors dog. Ended up taking him to a 24 hour animal hospital that was going to check him out and turn him over to a wildlife rehaber. Wish we could have let him be for a short time to see if he reunited with his family, but with dogs on the loose...


BTW, I hear WHITE rabbits are SO delicious! (and, really cute when they're mad!)

sqinney, I've never seen a groundhog, but I think it's good of you to rescue it from the dogs & take it to the shelter. Very Happy So now it's your turn to have something good happen today! Very Happy

hamburger, sacrifice them all, i'd say. rabbits, hares, don't matter. i am just wondering, if you are close enough to a hare to sprinkle salt on its tail, then wouldn't it be easier to catch it right away instead? it's like this joke about mothballs.... nah, way too long and not that funny...
