This is a question that isn't hard to Google. But I'll give you a basic answer: white hat is SEO which is natural. It's search engine optimization where you promise a site about such and such and you deliver it, to the spider bots and to the people reading the content.

Black hat SEO is keyword stuffing, invisible text, link farms and other practices which are essentially lies to the spider bots and to the people expecting one form of content and being tricked into seeing another.
