Welcome to a2k, shiny!
Good choices. There was a Stella Artois advertisement a few years ago, in the UK, which used "She" (Bert Bacharach - composer) in French. I loved it in that version and can't find out who recorded it. Damn!
Here are a few of my favourites:
Beatles - Here there and everywhere
Massive Attack - Protection
Gil Scott Heron - The Get Out of the Ghetto Blues
Mr Scruff - Get a Move On
Nina Simone - I Put a Spell on You
The Red Hot Chilli Peppers - The Zephyr Song
Royksopp - Remind Me
Billy Holliday - I loves you Porgy
Of course, they're not all of my possible top tracks, just a selection.

This is a tough one. I can only come up with a short list of current favourites:
Black Shuck - The Darkness
Keep Me in Your Heart For A While - Warren Zevon
Stranger to Himself - Paddy Keenan
Angel From Montgomery - John Prine
I prefer
something by the Beatles above all other ballads they wrote
Any Billy Joel.
Almost anything by Alabama.
Most pre-2000 country.
Oh my favorite, cav. Angel From Montgomery.
Prine is quite a songwriter.
Paul Simon-- Second Avenue, The Boxer.
Can't believe I'm going to say this, but Neil Diamond (hate his voice, but his writing has been wonderful, at times.)
Sweet Baby James-- and the voice, too.
Dozens of songs by the Beatles, Bob Dylan, Leonard Cohen, Leadbelly, Jerry Lee Lewis, Harry Belafonte, Hank Williams, Elvis Presley, Clyde McPhatter, Frank Sinatra, Lena Horne, Peggy Lee, Judy Collins, Buffy Sainte-Marie, Joan Baez, Pete Seeger, Janis Joplin, Louis Armstrong, Little Richard, Pat Boone, Phil Ochs, Woodie Guthrie, Jo Stafford, Brenda Lee, Donovan, Jackie Wilson, Selena, etc. etc.
