Deer crossing question

As I travel the highways, I notice signs that read "Deer Crossing." How do the deer know to cross at those signs?

I hit one that tried jaywalking a few weeks back. Fortunately, the deer and my truck survived the encounter. It got knocked into the ditch, but ran away and my truck had no new dents from the encounter.
