Hi all, I have just finished making a huge batch of picallilli for Christmas gifts and when I got to the potting stage I have found that my new jars arent air tight. I was wondering if I can reheat the picallilli to make it sterile again when I get some more jars hopefully today or tomorrow? I really dont want to lose it all... any suggestions?
Thankyou,
Heidi
@kisscurl,
"When in doubt, throw it out". Reheating will turn it to mush. You don't want to give your friends and loved ones botulism for the holidays. Only use jars that are made for canning (ie: Ball) and follow professional instructions exactly.
Did you refrigerate the big batch - or did you put it the jars?
As long as it has been cooled the entire time, I don't know why you feel you have to re-heat it.
It's the jars that need to be sterile.
Thankyou both... its in the fridge and its pretty hard still so i may give it a go and boil it and see if it holds its form. I would bin it but im making it for gifts as im broke so i cant afford to rebuy everything and do it all again on top of new jars. I will buy better jars next time! Never thought shops could sell jars for preserving that arent air tight... will check in future before i buy so many.
Thanks again!
