which is why Olestra has become primarily an industrial lubricant and paint additive.

Cross your eyes and you can see the stereo molecule.
Since most fats are glycerol wih fatty acids (usually 3) they can be absorbed. Olestra has a bunch of the fatty acids attached to a sugar base and this is not absorbed in the gut.
