I've been looking around and have yet to find electronic ignition, gas water heaters. All the ones I've seen are the standard standing pilot ignition type. Why haven't gas water heaters been made with this kind of ignition seeing that it's much more energy efficient?

Maybe you haven't been looking hard enough, because there are plenty of gas water heaters which don't use the pilot light method of ignition. In fact it is the standard method of ignition for modern energy-efficient models.
I myself have just bought a very good Bosch tankless water heater which has that type of ignition.
Rinnai, A O Smith, GE, all the big players have electronic ignition water heaters.
I failed to mention that I was looking into storage-tank water heaters.
