What search engines and Internet resources can I utilize to teach my students effective Internet searching skills?

First teach your class that not all search engines are equal. Do this by having each student choose a search engine and type in a specific phrase set by you. Have them list the first 20 sites in order of ranking. compare one engines.

Try typing the search key words in a different order and the same words on different days or from computers on different computer networks to the school.

The lesson here is don't just accept the first answer you find.

IMO, you only need one or two search engines to teach this sort of thing. The issue isn't the search engines themselves so much. The key to using any of them is the word selection that they type in to be searched.
