Here is my question
I sent off my DNA to two different companies. 23&Me and MyHeritage.
23&Me found Scandinavian DNA but MyHeritage found Iberian DNA.
These are NOT AT ALL from the same places and I believe have different genomes.
Please explain - -how can different labs find for these so very different DNAs?

The results were different, and there are lots of questions about how regions and places are described. For example, is Finnish DNA also Scandinavian DNA? Is Scandinavian DNA also Norse DNA? Is Norse DNA the same as French DNA? So, then is Scandinavian DNA the same as French DNA? This sort of confusion needs to be sorted out.

Maybe you should give more money to other DNA companies.
Or you could try being comfortable with who you are, and not worrying if your great granddaddy had a thing about fjords.

The test to analyze DNA is pretty standard, the interpretation varies widely. Here's an article about it:
