Recently I've taken to a scrumptious 'diet' of a quirky dish of what I first created about 35 years ago. I call it 'PRC' which stands for Peter Russell Clark who, back in the day, did TV commercials for a cheese company. My 'baby' (back then) (son) was a fussy eater and rather spoilt. One day, in desperation, I mixed up a bowl of all sorts... anything I had in the fridge/cupboard that I hoped would do the trick... diced pineapple pieces, diced carrot, diced apple, diced banana, diced ham, canned berries.. the list goes on... anything you would put into a fruit/veg salad, and finally the diced cheese. There was never any 'dressing' like I do today. The little darling would settle down in his bean chair in front of the tele, spoon in hand and get stuck into his 'PRC'.... I didn't know what else to call it.
So now.. 40 years later I've been tucking into the PRC with gusto. Being rather disabled I tend to make things as easy as possible in my dottage while trying to eat as healthily as possible.
I've been busting to tell that story ever since. Thanks for the opportunity from an 80 year old. Lots of fond food memories, that's for sure.
