How to fix my diet

i've been on a diet to lose weight for about a month + now. Based on apps and websites, the amount of calories i need to consume to lose weight is about 2000, but i got way too excited to lose weight and proceeded to intake about 1700 calories and below. At the beginning, I seem to be losing weight but then it begins to stay the same, and now i'm beginning to gain weight again although consuming my stated calories.

Then i learned about the metabolic adaptation and the way to overcome that is to decrease my calories intake to about 1500-1600 calories per day. But to be honest, I don't think i can do it because ever since i started my diet, i've always felt hungry like everyday. And this makes me think that my diets are not healthy and I dont think i can reduce my calories intake even further without feeling hungry all the time.

So what should I do? Can I reset my diet and begin increasing my intake to the originally recommended daily calorie intake?
