I am confused about this woman

We are both new in a very boring country , we got introduced through a common friend, she came to my office last month for the first time we had coffee and it was amazing, we laughed , we listened to music and it was obvious that we share alot of common things. same day she asked me to come to her house watch a movie... I went we drank alot and i was still sober and she made a move onto me and we made out the whole night , kissed passionately ( we didnt make love , she said she wasn't ready yet from the first time...) and we had a great time and she asked me to stay (which i refused because it was kind of weird as it was our 2nd meeting only), but we laughed alot and we had so much intimacy.
Next day she was totally stranger , she barely spoke to me and on whatsapp she was very vague.
a week later after not communicating much, she asked me to go on dinner and so we did , we went we got drunk and again it happened, a huge intimacy and passionate make out throughout the night, and once again next day she was still a complete stranger...

last saturday i invited her to my house for lunch , she barely had 2 glasses of wine and she initiated the make out, later on that night she also got too much drunk and we ended up having sex 3 times... part of me knew that the next day she will not be the same person once again... so i took her phone ( i know it is creepy but i had to) and checked what she was saying about me and she apparently told someone that she enjoys me alot but there is no spark!
later that night she asked me she wants to sleep over , we slept we hugged we kissed even when she woke up she even told me all night long she loves me... but sadly next day once again she returned to be the same strange person.
So i had to put an end to all this BS because i liked her alot and i didn't want to end up heartbroken, so i spoke to her and i told her you cant do that anymore and we need to stop communicating, she claimed to be very sad and apologized to me over and over( mentioning that she has issues... its me not you... total relationship breaking BS) next day she called me crying (i guess she was drunk..) asking me to be part of her life and it was her fault and she doesnt wanna lose me.
That was two weeks ago , i didnt call her and she she didn't call ... but this mystery still tastes sour and i would like to know what you think.
