I am accepted at Florida Institute of Tech with a $10,000 Scholarship and at Champlain College with $8,000 scholarship. I have a good reason for my low SAT score and for the gap year. I am fluent at English buy I don.t have TOEFL/IELTS score. Considering I have all the required financial documents and other things, how likely will I pass the visa interview?

How long have you got before the visa interview? If you have a few months, why not take the TOEFL/IELTS and if the scores aren't in, in time, tell them you're waiting for your results.

I have at most 2 weeks. I am applying for January, so I can't do that. I just wanted to know my chances before I west my money and time. So what do you think? Do I stand a chance?
Simply stick to the topic that you have scholarship opportunities. You will have to bring proof of acceptance to these schools.
No need to talk about test scores or other tests.

You have been accepted and have ability to pay(scholarships) That’s what they will want to know.
