The wife works in commercial food prep,and has to wash her hands and then use sanitizer before putting on sterile gloves,multiple times a day.
As a result,her hands are terribly dry,with cracking that causes her serious discomfort.
Can anyone with knowledge help us with this problem?

Oh boy, I'm sorry she's going through this. I would suggest not just lotion whenever she can, but also making sure she's well-hydrated. And have her talk to her doctor; maybe there's something more industrial strength that she could get with a prescription.
