Dulce would be Spanish for sweet and Quita being Spanish for release or removal.
I wouldn't go that far. Dulce (adjective) is sweet and -quita endings are often added to affectionate nicknames etc for females (-quito for males). Dolcequita just means "little sweet female one". A chiquita is a sweet little girl. Una chica dulce. Other girls names ending in -quita: Blanquita, Chaquita, Enriquita, Jacquita, Laquita, Mariquita, Marquita, Niquita, Paquita, Shaquita, Shiquita.
-ita (female) and -ito (male) endings often imply smallness (or affectionate "littleness"). Un mosquito is a little fly (mosca).
