I've dated this guy for almost one year, and lately he has been very distant and not talking to me. But I confronted him about it and asked him if he's moved on, and he told me he was very sorry and that he hasn't been with anyone else... So I took it as he still is interested and wants something with me. However, a month passes by and no contact from him whatsoever. Why would he do this?

not being with someone else does not mean the same thing as being interested in you
it doesn't matter why he's no longer in contact. there are far too many possible reasons to begin to speculate
he is not in contact. full stop.

Because he's under the mistaken impression he's letting you down easy. Instead, he's being cowardly and cruel by not giving the clean break that you clearly need. He's probably in the process of ghosting you but you just keep interfering with his plans.
Take control of your own destiny. Tell him you're done and block his indecisive ass. At least that's what I would do. Life is too short for this nonsense.
One full year of dating and LATELY he hasn't bee responding to you? What's 'lately' mean?
He's just faded away. Either a coward or indifferent or he has someone else - all reasons not to bother with him.

Within the past month. Just nothing. But he says he's never felt like this about anyone before and he really likes me. But then he just disappears.

So what does he say when you ask "What's up? Haven't heard from you in xx days. You OK? Let's have lunch tomorrow. "

Yeah.. he's done this before and I forgave him. But he never tells me why. And if he does he just says he's busy with work.
But if I do ask him, he usually just ignores me for days again. Then reappears. It's so weird and hurtful :/

Because I love him. Then he started disappearing once he already got me attached to him :/

Right?! And he thinks NOTHING of it.
Yeah I have.. but he will never introduce me to his parents. Everything is "rushed" when I'm with him. Like he has no time. But then he just tells me he has a lot going on or whatever.
