Put a cast iron pan over medium heat. Fry one or two pieces of pancetta or thick-cut bacon. Remove bacon when crisped, add half of a diced red onion, saute until soft, remove to side, add halved baby brussels sprouts, cook without moving for 5-7 minutes, stir, cook without moving for 5-7 minutes, stir. Repeat as necessary until brussels are cooked through, browned, and caramelized. Reincorporate bacon and onions, drizzle with 1/4 cup balsamic vinegar, allow to reduce for a minute or two, then serve. Delicious!
