I want to execute a shopping agreement with some filmmakers who have a short film, but are now expanding it into a script. How do I word this agreement so I have the option on the future script as well?

Look up model contracts, particularly those for working with artists and performing artists. Get a lawyer to look over your draft (and pay for that help, please - it shouldn't take too long if you have done your homework) and that should do it.
