I would like to know if my sentence is correct.

Example
I don't like to enjoy the scenery standing on the edge of the rock.

The grammar is OK, the logic is a bit shaky. If you don't like standing on the edge of the rock, then should you do so, you would not be "enjoying" the experience.

I don't like enjoying the scenery that i am seeing now standing on the edge of the rock.

You seem to think 'enjoy the scenery' means the same as 'look at the scenery'. When you enjoy something it makes you happy. Like I said before, saying 'I don't like enjoying...' doesn't make sense.

You could say "I cannot enjoy the scenery because I don't like standing on the edge of the rock".

We'd probably not enjoy much of anything under those conditions. Let's try:

I don't like to attempt enjoyment of[the scenery while standing on the edge of the rock

I find it difficult (or uncomfortable) to enjoy the scenery when required to try it while standing on the edge of the rock
