A little over a week ago my girlfriend came out to me and told me she's a lesbian. As me being a guy and how she asked me out first, this was a huge shock to me. She had been distant for awhile and I was expecting her to break up with me but was not expecting that. She's still the coolest person I've ever known and want to be friends with her and she wants to with me. I've asked for some space for the time being. How will I know when I should hang out with her again? How will I know when missing her changes from missing being in a relationship with her to just wanting to hang out missing her?
The right time to start hanging out with her is when you feel you want to hang out with her. Could be right now, could be next week, month or year. Maybe you find some other people to hang out with too? That way you won't get to moony about her being your ex.
Having the other party in a couple saying "It's over" is always tough, quite regardless of the reasons. From your short account, it sounds like it could be that your ex wasn't previously comfortable with her sexuality - for many, acknowledging that they are excited most by someone of the same gender is damned scary.
Taking your time to process this is good advice. But if she's a friend, wouldn't it be a fine thing to maintain that. Friends are valuable.
