Hi there!
One year ago I had to write the letter.
I wanted to say that job as a doctor it's my dream. There were a sentence I wanted to use but I didn't know how to write it. I am still do not know how to.
Here are options I though about :
1) I've always been dreaming to become a doctor - I think that's wrong one.
2) I always wanted to become a dcotor
3) I always dream to become a doctor
I would be glad if you help me and correct all mistakes I did - I am a student that would help me.

I would try writing it as:
I've always wanted to be a doctor.
Or more formally, I have always wanted to become a doctor.
