I am looking for a formula that no matter what day it is will always return the next upcoming Monday's date. So when I print sheets no matter what day it is the next Mondays date will be on them

Are you talking about an Excel formula? Or something else because your question is a tad vague on the details.

Try the following:
In A1 is a date, ie: 06/02/2013
You need to find the next Friday after that date. In Excel Friday = 6 (Sunday through to Saturday).
=CEILING(A1-6,7)+6
