The Al Mar mini SERE is simply the most useful single bladed knife I've ever used. It is almost completely different in function from his full size SERE. Al died a number of years ago and I don't know if either are still available.

If you are looking at weapons instead of general use, Cold Steel has some good fixed blade models. I've never been completely happy with their folders.

The foldable Swiss Army Spammer by Victorspam is pretty good.
