Bluray movies to convert to MKV for streaming to TV

Hi, We have a vacation home for rental with some 12 tv’s around and cinema in the basement with projector and so on. For that purpose we’ve purchased some 700 bluray movies to convert to MKV for streaming around to all the tv’s in this house. Recommend some software for us?
