We are a small bakery and we make a fried snack pie. They are fruit fillled with a powdered sugar glaze.
Our challenge is shelf life. We currently package our pies on a ffs machine with a ppe film. But once the pies are packed after a few days the glaze starts to.break down and they start to get soggy. If we leave the pies out as a test they stay in great shape for quite a long time. I have seen some of the other snack pie companies using a waxed paper or glassine type package that perhaps gives better breathability but I have had a hard time sourcing any to test. I would appreciate anyone with sources for this material or any other general suggestions.
