I've been told that what a lot of us in the west consider Chinese food isn't something you'd find in China. Those big orders of deep-fried cr@p we see in "chinese" restaurants are often our own weird interpretations of good Chinese dishes.

That's what I've heard too, ehBeth. Here on the Pacific Rim I think we may be getting better, but I'd love to go to China and taste the cuisine there. Then I'd really know if I liked Chinese food or not!

The short answer is, yes, I like the food served here in Chinese restaurants.

I used to eat "Chinese" food (well, the American version) all the time and very little was deep-fried-- Kung pao chicken, beef with broccoli, etc. And I gained weight like no tomorrow. I chalked it up to lots of oil used in the cooking process.

I knew a Chinese guy who owned a Chinese take-out place here. He referred to it as "dog food."

Even at the restaurants in Chinatown(which I assume are more authentic), a lot of the food is heavy in oil and fat. I do like Chinese though. Also like Thai, Japanese and Vietnamese, which are lighter.

I once read that statistically, in any town in the US, no matter how small, if there is one non-American restaurant, it is most likely to be Chinese.
