we used to buy catelli sauces by the case up in ST Stephen and smuggle em back to the Mainers who thought Ketchup made a good marinara.

I miss em. We have some relly vile spaghetti sauces in bottles down here. Thats why Ive always grown a dumptruck load of Roma tomatoes each summer. Weve had a cool spell and the tomatoes are no longer setting fruits even if we would hand pollinate the flowers .

I'm making beef enchiladas (via a Ree Drummond recipe except I'm using flour tortillas, asadero cheese instead of cheddar, and adding some spicy sauteed brussels sprouts). But this is taking a while, so my dinner will be some of the soup I still have at hand.

Note for next time -
- enchiladas tastiest I've had for a long time, and the brussels sprouts were good tucked in with the ground beef and caramelized onions, and put some of the diced jalapenos in with the beef
- I'd make the sauce somewhat thicker next time and use less of it in the dish, saving some for other uses (never too much tomato sauce at hand)
- with flour tortillas, I didn't need to fry them at all before adding filling, so recipe easier

Boneless chicken feet. Saw them in the supermarket and had to give them a try. I'd supply details, but I doubt anybody wants to hear them.

I ate em in a very thin but tasty broth in both Taiwan and on mainland China. The whole thing was a soup and a snack. What the ****, we eat wing tips (We usually use that **** for crab bait)

Well, I somewhat messed up by using flour tortillas, re the liquid and the timing. But the recipe says corn tortillas so you should be good to go.
The flour ones presumably would work better if I were smarter, as there are lots of enchilada recipes out there with flour tortillas. I had mine in the oven too long for the texture of the tortillas, me thinks. Still delicious though.

I admit to never having tried them, with or without bones, and we don't have a swath of interesting chinese restaurants here in sandville for me to go a'venturing.

Ah. Well, these were pre-packaged, pre-marinated in a thinnish red hot sauce. To round out the dish, I chopped up green onions, garlic and some green chilies and stir-fried it all together. Normally, I'd have included carrots and/or broccoli, but I didn't have any on hand. On top of it all, I sprinkled some local red pepper powder to give it some extra life. If I do it again, I'll be sure to take a photo. Smile

They're almost always BBQ'd or stir-fried over here. Never seen any in a broth or soup. Regional variation, I suppose.

I got all the stuff together for salmon fishcakes, but then pooped out. So dinner is just some toast and cheese and a banana fresh peach raisin cocoa yogurt smoothie.

Ah, that first one looks more similar to Korean style, especially with the chilies. The thing over here is that they should be as spicy hot as you can handle.

Luckily, I've eaten before I saw this....tonight it was salmon with fennel
that looked similar to this
