a man was swimming at the beach. He saw a plane in the sky and suddenly died. Why?

As he was swimming, a fire fighting plane flew over and whilst collecting water, scooped him up. Perhaps, his wife was the pilot and she dumped him in the burning forest.
If he was looking at the sky then he was most likely doing the back stroke which prevented him from seeing the large ocean going vessel he was about to run into head first killing him.
Maybe it's like the "Six Feet Under" episode where the lady died while hanging her clothes on the line when an airplane went over and dropped it's frozen clump of toilet waste...
