So how much spinich content is there in spinich noodles?

I would venture a guess that it's not much. (And it's spinach btw.) I think there is enough to color the noodles but if they put in too much, the textrue would be wrong. Just MHO.

(Oops, spinach) Thank you for the recipe. I was wondering if any of the vitamins and iron make it through the process or if it ends up with the same nutritive value as any other pasta.

I don't know, Pitter. You could check on google about which vitamins are in spinach and whether they are broken down in cooking.
