Anybody out there got a recipe for Banana Loaf? (Not with nuts)

Don't have a recipe that I have used personally, but this one looks like it might be nice:

2 ripe bananas
1/2 cup sour cream
2 eggs
1 1/2 tsp. vanilla
7 oz. flour
6 oz. sugar
1 tsp. baking soda
3/4 tsp. baking powder
1/2 tsp. salt
5 oz. soft butter

Puree bananas and sour cream until smooth. Add eggs one at a time, then vanilla. Mix together dry ingredients. Mix in butter and half of wet mixture. Add remaining wet mixture in two batches and mix for a couple of minutes to develop structure.

Bake in an 8-cup loaf pan for 1-1 1/4 hours at 350 until well browned and a tester comes out clean.

Cav, that sounds similar to the recipe that I use, however, I have never tried making it with sour cream. Sounds good, I'll have to try that next time Smile

Thanks everyone! Cav........how much is in a cup?, we don't use that measurement. Can I omit the sour cream? (difficult to get where I live) I have everything else.

1 cup is approximately 8 oz. You can use double cream in place of sour cream, or creme fraiche.

Roast Beef
Yorkshire pudding

Carrots
Peas
and gravy!

and of course....Banana Loaf. Ruth (daughter and heiress to the Morgan fortunes) is now calling it 'internet loaf'!

There is a veggie alternative, Mr S doesn't eat anything 'with a face'

I actually have a Banana Bread recipe. It's pretty rich, but very good. You'll have to convert to metric.

Banana Nut Bread
Sift together:
2 cups flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda (bicarbonate) and 1 teaspoon salt.

Then Cream:
1/2 cup butter, softened; 1 cup sugar and add 2 large eggs, one at a time beating well after each.

Add 1 cup mashed bananas (about 2 large ones) and 1/2 cup chopped nuts (I like English walnuts)

Add dry to wet and stir just to combine. Bake in a 9x5x3 inch loaf pan at 350 F for about an hour. When a toothpick comes out fairly clean it's done. Be careful not to over bake.
