Hi, Binky. Welcome to A2K. I make it the easy way:

Cut your steak in long strips and flour lightly then brown.

Add golden mushroom soup and allow steak to cook thoroughly.

boil egg noodles, but don't overcook.

Right before serving, add the drained noodles and sour cream.

Quick and easy and delicious.

We cook it a bit different: You'll need for 2 servings

Beef filet (1 - 1.5 lb)
2 sp Butter (sweet)
salt, pepper
2 onions
2 tomatoes, skin removed
1/4 cup sour cream or better creme fraiche
1 teasp. mustard, lemon juice
1 cup mushrooms
2 large pickles
if you like: 1/4 lb. cooked ham

Cut beef in stripes and sautè in hot butter for a couple
of minutes . Take the beef out, salt and pepper it and
keep it warm. Put diced onions in the pan, add tomatoes
and cook until onions are soft. Add sour cream or
creme fraiche, mustard and lemon juice.

Cook mushrooms in hot butter for 5 minutes, ad diced
pickles and add it to the onions with sour cream. Add
the beef and cook for an additional 5 minutes.

You can add cut up cooked ham, if you choose to (I don't)

Serve with pasta, or potatoes.

Red bees, cornichons (all sliced in small pieces) and some tarragon, if you want it tasty like the "original" bœuf Stroganoff.

Instead of onions use shallots, and you need about about two cups of good beef stock for the sauce as well.
