Actually, in my view, the digging is done in more or less the same way as it was done when I did my archaeological exam 40 years ago (minors, a by-product, made some holes in what is nowadays the archaeologocal park of Colonia Ulpia Traiana).

In the above region (north, north-east and east of Frankfurt/Main) in the white parts (the shaded area means forests/mountains) there are 350 known Roman villas. (Which shouldn't wonder because it's next to the limes.)

In Hessia and in the Rhinish part of my state, only extraordinary well preserved villas are restored - all the others are just photographed/documented.

could the fortified limites be seen by remote sensing? (Im most interested in the tools of survey )

The Upper Germanic & Rhaetian Limes was known since centuries, marked on the map (published 1728) below as "Reliquiae munimenti Romani sive Lineae adversos Germanos erectae, hodieque Der Pfalgraben, Pfolgraben vel Polgraben dictae"

Last year, they looked at a wall of the limes in Denkendorf (Bavaria)

Disregarding the German tv-sound (it's small local tv-station in Ingolstadt) you still can watch ...
