Hm. I think the very-very clever stroke their beards to keep the food particles and oils from their various meals evenly distributed throughout. In that way, whatever beasties that come to live between the strands are able to distribute themselves evenly rather than clumping up in one area and distracting the wearer.

The very-very clever stroke their beards because their Mothers raised them to refrain from booger diving. So when they needed to have busy fingers...they stroked.
