My folders are in the "files spilling out format" which is very distracting )I have a lot of them)

How do I change the appearance so that the folders appear closed?

@lovejoy,

change the folder view to List or Details, which can be found on the View dropdown menu.
set up one folder the way you like it, then
Tools --> Folder options
View tab
Apply to Folders

RP that's not quite what I meant. I want the icons to be "large" not lists but just not in the format of the documents within to be shown "spilling out"

i don't think windows 7 has a "closed folder" view...
