Bats hunt at night, and cannot use light to help them find prey and avoid obstacles. You might say that this is a problem of their own making, one that they could avoid simply by changing their habits and hunting by day.
In the second sentence, why a conjunction is absent after comma? And what is “one that” mean here?

Try to simplify the structure of the sentence:

I had a party, one I will never forget

"one that I will nver forget" is an adjective phrase explaining "party"
