Hi Guys,

High Gluten Flour is available in most supermarkets.

King Arthur markets theirs as "Special Bread Flour"


I have a great bagel recipe,..they are a bit involved to make,..but not that bad.

The best recipe I have is in my files at work,..I'll post it for you tomorrow evening!

lilk, the malt is extremely important. Get malt syrup if you can and put it in the water that you boil the bagels in. They are a lot of work so be prepared. I have a bagel cookbook that I got from King Arthur Flour I think you can search their recipe archive.

our bagels come from st. viateur bagel makers in montreal .
crisp on the outside - chewy on the inside - they are GOOD !!!

there is only one store in kingston "having the privilege" of getting those bagels .
they usually arrive on wednesday at 1 pm and are sold out before the day is over !
be there or be square <GRIN>
