I would like to know what the most correct translation from English to Latin is of "be the change you wish to see" and "live the life you love"

Thanks!

I would say:

Es mutatio quam videre vis

Vive vitam quam amas

I learned Latin in a church context, so I would pronounce it differently from the
way most Latin teachers would tell you.

Es mutatio quam videre vis
Ess moo-TAH-tsee-oh kwahm VEE-de-ray veess
Vive vitam quam amas
VEE-vay VEE-tahm kwahm AHM-ahs

That is how "ecclesiastical" Latin is pronounced.

Here is a guide to classical pronunciation.
