Fried onions. Do tell.

I love fried onions.

I could eat a plate of fried onions. Not onion blossoms or anything fancy dancy like that.

Just a couple of nice onions sliced, in a pan with some garlic and some kinda grease. Mebbe one sweet onion in the mix. But really plain old fried onions do the trick.

They could go on a burger, near a piece of grilled chicken or fish, on top of a heap of roasted veggies, on a sandwich with almost anything or nothing else. Good bread helps if it's fried onions on a sandwich. Solid bread. Rye is good.

Oh, and don't slice my onions too thin. I like to be able to see them.

Do you do fried onions?
Do you love some other veggie beyond common sense?

Do tell.

@ehBeth,
I just did yellow taters, a big vidalia onion, and mushrooms in a bit of olive oil and garlic.

@ehBeth,
I like fried onions. Well, sauteed slow onions. Olive oil, two or three regular onions medium sliced and somewhat chopped; after 30 or 40 minutes, a fat tsp. of stone ground mustard, little salt, maybe a squoush of lemone.

@ossobuco,
Lemon's always good with onion.

This all came up as Set was commenting that he didn't get any onions the other night. Well, he only cut up one. Why would I think one fried/sauteed onion was for sharing? harrumph

He stepped up tonight. Two big onions - one of them a Vidalia.

@ehBeth,
Fried onions with a bit of red and green pepper and lots of Frank's Hot Sauce is to die for. Great on burgers or just about any other way you choose to ingest them. The smell is fantastic too.

Any kind of onion will do. White, yellow, sweet or whatever is available. mmmmmmmm
