So, the Girl wants to do some kinda Mexican thing for dinner. I'm 'sposed to take the chicken she roasted last night, for some kinda goofy dish--chicken faginas, or chicken vaginas . . . for god's sake, has she lost her mind ? ! ? ! ?

Somebody help me out here.

In the first place, déclassée would be the feminine modifier--in my case, that would be déclassé.

In the second place, i've got a pile of chicken legs here . . . so all i can see that that means is that there's a buncha chicken amputees out there . . .

I'm thinking chicken legs wouldn't be so nice in a fajita - too much effort for too little food, but hey, if that's what the woman wants... go for it.

Down here in the south, close to the border, chicken fajitas go like this:

cut a red onion into rings
cut red, green, and yellow peppers into stripes
cut up the chicken in pieces

put everything into a frying pan and cook until tender. Season to taste,
and serve with warm flour tortillas, guacamole, and beans on the side.

I found a couple of recipes that interest me, one with the chicken not already cooked, where you cook it with stuff, and one where you cook the chicken and then add everything else, that would, natch, work with cooked chicken.
The first recipe sounds more delicious to me, though more complicated, and could be adapted to already cooked chicken too.

Not that you asked for recipes... you may already be working with one.

That boy sure knows how to talk.

So last night I threw about 20 - 25 chicken drumsticks as well as a whole chicken into the oven to bake. The drumsticks were covered in a pre-fab black bean sauce, the chicken was stuffed with a large bulb of fennel.

Tonight, "cooking" means 1) buying an avocado, 2) picking chicken meat off the roast chicken, 3) opening containers of sour cream, salsa, 4) putting lettuce, tomatoes and shredded cheese into bowls, 5) finding spoons for (3), 6) chopping up the avocado, 7) mixing up some sauce to drizzle over the shredded chicken, 8) grilling the corn tortillas quickly, 9) putting out 2 plates.

Nothing like an insta-meal Cool
