Mock Mascarpone

Mascarpone is an Italian cream cheese, which is used in many things, especially Tiramisu. It can be found in many specialty stores as well as many good supermarkets. It usually comes in a flat tub, and is quite expensive.

If can't find or afford Mascarpone, this is an inexpensive substitute.

1 cup regular cream cheese
2 tablespoon white granulated sugar
whipped cream to taste

Bring the creamed cheese to room temperature in a mixer bowl, until soft. At a slow speed, mix in about 2 tablespoons of the sugar per cup of cream cheese. Fold in enough whipped cream to produce airiness.

Store covered in the refrigerator.
