V-8 RICE SALAD
Adapted by BumbleBeeBoogie

2- 1/2 cups V-8 juice
1 teaspoon Tabasco sauce
1 cup raw brown rice
15 ounce can black beans, rinsed and drained
1 cucumber, diced
1 can (12 ounces) vacuum packed corn
1/4 cup chopped cilantro (optional)

In a large covered pot, heat V-8 and Tabasco to a boil, add rice and simmer over low heat, covered, for 45 minutes, until rice is tender.

Remove the pot from the heat. Transfer the rice mixture into a large bowl. Stir in the remaining ingredients. Cover the bowl and refrigerate until cold.
