SPINACH. BACON, GOUDA CHEESE SALAD
Adapted By BumbleBeeBoogie

4 slices bacon (or more, to taste)
1 cup grated smoked gouda cheese
4 cups torn small spinach leafs
8 mushrooms, thinly sliced (or more, to taste)
1 cup green onions, white and green parts, thinly sliced
1/4 cup vegetable oil
2 tablespoons fresh-squeezed lemon juice
1 clove garlic, peeled and minced
1/2 teaspoon salt
1/4 teaspoon dry mustard
Pinch of cracked black pepper, to taste

Crisply cook the bacon and drain on paper towels. When cool, crumble the bacon into a bowl; stir in the cheese; reserve.

Place the rinsed and dried spinach leafs in a large salad bowl; top with the mushrooms, green onion, and bacon-cheese mixture.

Combine the oil, lemon juice, garlic, salt, mustard and pepper in a small jar with a tight fitting lid. Shake well. Pour over the salad and toss well. Serve immediately.
