DAVID WADE’S SAN FERNANDO BEANS
Adapted by BumbleBeeBoogie

1 pound dried kidney or red beans
1/2 pound bulk pork sausage (extra mild, or spicier to your taste)
1/2 cup granulated brown sugar
2 cup sliced apples (Delicious or Granny Smith)
4 medium yellow onions, peeled and sliced
2 cloves garlic, peeled and chopped
1-1/2 cup tomato juice
2 teaspoons Worcestershire powder (or sauce if powder unavailable)
3 teaspoons salt
½ teaspoon freshly ground black pepper
1 teaspoon chili powder (or 1/4 teaspoon, to taste)

Rinse the beans in a colander and soak overnight in cold water. Drain the same water into a large pot, add the beans, and bring to hard boil. Cover and simmer for one to two hours until the beans are tender. Drain the beans.

Combine the remaining ingredients in a large pot and mix thoroughly. Bring the mixture to a hard boil. Add and stir in the drained beans and simmer over low heat for 2 hours covered with a tight fitting lid.

The flavor will be changed depending on the type of apples, spiciness of the sausage and amounts of chili powder used.
