SWEDISH PUDDING
Adapted by BumbleBeeBoogie

1 large egg, slightly beaten
3/4 cup granulated white sugar
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup Granny Smith apples, peeled, cored and chopped
1/2 cup raw walnuts, chopped

Preheat the oven at 350 degrees F.

In a large bowl, beat the egg lightly and add the rest of the ingredients. Mix well.

Pour the mixture into a buttered 9 inch pie plate. Bake for 30 minutes.

Serves 4. Good topped with Swedish Lingonberry sauce or Swedish Cloudberry jam. If not available, heat a little apricot jam or preserves in the micowave oven and pour over the cake slices.
