IMPOSSIBLE FRUIT, NUT AND COCONUT PIE

Preheat the over at 350 degrees F. Butter a 9 or 10-inch pie dish.

Combine in a large capacity food processor or blender:

4 large eggs
1 cup granulated white sugar
1 cup dried coconut
1 cup whole milk
1 cup slivered almonds
1/2 cup (1 stick) butter, melted and cooled
1/2 cup all-purpose flour
grated zest of one orange and one lemon
1/2 cup of orange juice
1/2 cup lemon juice.

Whizz the mixture for about two minutes.

(Note: If you don't have a large capacity food processor bowl or blender, then blend all of the ingredients except the orange and lemon juice. Pour the whizzed mixture into a large bowl and stir in the orange and lemon juice 1/2 cup at a time and thoroughly mix.)

Then pour the mixture into the deep, well-buttered 9 or 10-inch pie dish. Bake for about 1 hour or until golden brown. Let the pie cool and set; then cut into wedges.
