[From Middle English splayen, to spread out, short for displayen; see display.]

I seem to remember the use of this word in describing how to cut up a chicken in one of my cookbooks.

it's a good method.. with the turkey yesterday, the skin got all nice and crisp and the breast stayed juicy, erm...

I think the best turkey I've e're cooked. I'll link to that recipe if I trip on it...
easy peasy and good...
