When the Lady Diane, Phoenex and I went to the farmers market recently, I talked Diane in to buying three quince, which she had never tasted and didn't know how to prepare. I send her the following information and thought all of you might also be interested

Diane, I chose this site because it features baking the quince instead of simmering in a pot on the stove top. Baking the quince really intensifies the flavor. I remember adding orange juice to the cooking liquid, which was delicious.
